We would like to recognize a few of our most avid alumni, including a couple taking their 50th European biking tour this fall (that’s right, 5-0!). Read on to learn more about each of them, and what it is about the Austin-Lehman experience that keeps them coming back year after year (after year after year after year!).

chuck and Judy Silberstein Celebrate their 50th European Adventure
|
If you think you travel a lot, think again. Meet Chuck and Judy Silberstein of Ossing, New York, about to embark on their 50th European biking adventure this Fall. The Silbersteins took their first Euro-Bike (now ALA) tour over 20 years ago. It’sthe combination of a personalized approach, they say, along with the sense ofease they feel on each trip and their friendship with Ron (owner/founder ofEuro-Bike) that keeps them coming back. “When you sit down at a café, your guide is there to translate the menu. When you’re about to tackle a tremendous hill, your guide is there to offer you a lift. When you want some advice on where to stop for lunch, your guide is there with suggestions. We have known Ron and the guides for over 20 years and there’s no one more receptive, engaging or capable!”Several years ago, Chuck and Judy introduced the two-wheeled vacation concept to their friend Al Tarasuk of Great Neck, New York. Since then the trio has traveled together on over 20 tours. Al loves being able to bike at his own pace and trusts Ron and his guides to take care of every detail, which he says, “makes for a very relaxing vacation.” Biking Europe, he adds “ …the fancy bikes, the backcountry routes, the backup van…it’s just something you couldn’t do on your own.”Chuck, Judy and Al are getting ready to set off on their next joint adventure this October to the Tuscan Coast & Isle of Elba. Ken Lyons: Boy Scout turned Backcountry Enthusiast
|
Thirteen years ago, Ken Lyons took his first trip with Austin-Lehman to a part of the world he’d only dreamed about exploring as a child: Glacier National Park. Since then, Ken has been with us on over 20 trips. As a boy scout growing up in New Jersey, Ken spent his childhood camping, backpacking and experiencing “the sheer joy of being in the woods.” With Austin-Lehman, Ken says, he’s kept that joy alive. While he still loves to backpack on his own, traveling with ALA allows him to explore the wilderness, but with the added comforts of great guides, delicious food, a comfortable bed and peace of mind. “Backpacking is pretty strenuous and it entails sleeping in a tent and eating freeze-dried food. There is a lot of planning that goes into my trips…things like getting permits, securing rental cars and buying equipment. ALA provides me an opportunity to learn, explore, try new things and then come back to a nice room, great food and great company. You can't beat that. I can't think of a single need that didn't get met on any of my trips.”

Strawberry Chicken Salad ALA Guide Specialty

| Method: |
- In a bowl, combine chicken and celery.
- In a small bowl, combine mayonnaise, lemon juice, mint, salt and pepper; pour over chicken and toss.
- Refrigerate.
- Just before serving, fold in strawberries, oranges and almonds.

| - 4 cups cubed cooked chicken |
| - 3/4 cup chopped celery |
| - 1/3 cup mayonnaise |
| - 2 Tbs. lemon juice |
| - 1 Tbs. minced mint |
| - 3/4 tsp. salt |
|
- 1/8 tsp. pepper
- 2 cup sliced strawberries
- 1/3 cup slivered almonds
- 1 can of mandarin oranges
