Black Bean and Corn Salad

| Method (Serves 6-8): |
- In a large bowl, combine the beans, corn, tomatoes, bell pepper, onions, jalapeño and cilantro.
- Add the lime juice, olive oil, and add salt and pepper to taste.
- Stir and chill before serving.

| - 2 cans black beans - drained |
- 1 can corn - drained
|
- 1 pint grape tomatoes - halved
|
| - 1 red bell pepper - diced |
- 1/2 C chopped green onions
|
- 1 jalapeno - seeded/minced
|
- 1/2 C fresh chopped cilantro
|
- 3 Tbsp lime juice
|
- 2 Tbsp olive oil
|
- salt and pepper to taste
