Black Bean and Corn Salad
Method (Serves 6-8):
  1. In a large bowl, combine the beans, corn, tomatoes, bell pepper, onions, jalapeño and cilantro.
  2. Add the lime juice, olive oil, and add salt and pepper to taste.
  3. Stir and chill before serving.

- 2 cans black beans - drained
- 1 can corn - drained
- 1 pint grape tomatoes - halved
- 1 red bell pepper - diced
- 1/2 C chopped green onions
- 1 jalapeno - seeded/minced
- 1/2 C fresh chopped cilantro
- 3 Tbsp lime juice
- 2 Tbsp olive oil
- salt and pepper to taste
The toughest part is going home.
