There's a reason why our guests rave about our food. Whether served campfire-side or at a 5-star restaurant, our artfully prepared local eats are sinfully delicious!
Cold Cucumber Soup
Makes 10-12 servings.
Method:
  1. Whirl all ingredients together in blender or food processor in batches until pureed.
  2. Stir together in large bowl and cover refrigerate until ready to serve (at least 3-4 hours).
  3. Soup may be made 24 hours in advance and refrigerated.
  4. Garnish with fresh mint leaves before serving.

Ingredients:
- 1 large cucumber - peeled & sliced
- 2 cups plain yogurt
- 2 cups peach yogurt
- 2 cups chicken stock, chilled
- 2 tbsp. minced green onions
- 3 tbsp. minced fresh mint
- salt and fresh pepper to taste
- fresh mint leaves for garnish
The toughest part is going home.
