| Tackling the tetons

When I signed up to climb Grand Teton,the highest mountain in Wyoming’s Grand Teton NationalPark, I committed to reaching two of my New Year’s goals: 1) to make itthe daunting 13,775 feet to the top, and 2) to get in shape, and to stay inshape in order to make the climb as easy (and fun!) as possible. Running an adventure travel company, I get askedall the time: “How fit do I need to be totake one of your trips?” For over 20 years my answer has been thesame: “It’s really up to you – ALAvacations are as active as you want them to be. That said, the better preparedor in shape you are, the more enjoyable the trip will be.” |

|  | | Method: | - Soak rice in 3 cups water for 3 hours. Strain rice and discard water.
- In a blender, combine in batches 1/4 cup rice, 1/4 cinnamon, and 2 cups cold water. Process from low to high speed.
- Pour liquid through a medium strainer into a large jug or small bucket. Repeat blending process until all rice and cinnamon are ground.
- Cut cactus fruit in half and scoop out pulp. Mash with a fork or potato masher.
- Mix rice mixture with remaining cold water. Add fruit and sugar. Add 1 tablespoon chopped pecans to each glass before serving.
