What better way to take in the sights, sounds,smells and tastes of a new land than on a bike, with the sun on your backand the wind in your face? An interview with Ron van Dijk
ALA's European Operations Director, Ron van Dijk, was 16 years old when he was introduced to the world of bike tours. What beganas a summer job organizing European trips for a family friend in the Statesquickly evolved into a highly successful business.

Why the focus on“biking-only” vacations in 2010?

Soundsa bit scary, doesn’t it – a “biking-only” vacation? Actually, there’s no suchthing! Each of our biking vacations is extremely flexible and includes optional activities likehiking, rafting, sightseeing, wine tasting or an afternoon of R&R.

Theway I think of it, your bicycle is simply used as a pleasant means oftransportation to get you from one sight or village to another, from oneexperience or adventure to the next. That said, I can’t think of a better wayto travel than by bike, using all of one’s senses. You are so much closer tothe culture and the nature that surrounds you. Plus, you work up a greatappetite, so you can thoroughly enjoy your meals, without feeling the least bitguilty!

Truffle Omelette
Trip: France - Bordeaux to Dordogne Biking Vacation
Horchata
Method:
  1. Brush and wash truffle, then cut into thin slices. Let truffle macerate in cognac.
  2. Break eggs, saving one egg white - beat this white until stiff. Blend remaining yolks and whites into cream, beaten well, then season.
  3. Add truffle slices to the stiffly-beaten egg white and add one dsp. of truffle oil from tin.
  4. Melt goose drippings in frying pan. When drippings begin to smoke, pour in the beaten egg mixture.
  5. Carefully fold the egg white/truffle mixture into the pan.
  6. Cook over a high heat and serve the omelette folded over, on a serving dish garnished with leafy greens.

Ingredients:
- 4 eggs
- 1 good-sized tinned truffle
- 1 dsp.goose drippings
- 5 cl cognac
- 5 cl cream
- seasoning
The toughest part is going home.
