Let’s play a game: close your eyes and tell us the first thing you think of when you hear the words adventure travel. Maybe it’s a 20-something strapped to a climbing harness, dangling precariously from a rock ledge…or maybe it’s an athlete of the likes of Lance Armstrong tearing down a dirt trail at 30 miles an hour on a mountain bike. Unless you’ve experienced an adventure tour first hand, you may have a hard time visualizing yourself in the picture.

We hear it all the time: “Adventure travel – sounds like fun, but I could never do it!” Here’s some advice, folks: never say never. As hard core and adrenaline inducing as it may sound, we can undoubtedly say adventure travel is for everyone. After all, if it weren’t the case, we wouldn’t be in business! So if you think for a second that you’re “too old,” “too out of shape,” or “too chicken” to tackle a class IV river rapid, to ride horseback high into the mountains or to hike to the top of a pristine mountain glacier – think again.


Bill Callahan On Adventure Travel at 56
When Bill Callahan joined us at Austin-Lehman, he brought with him 30 years of sales experience, but he had a lot to learn when it came to adventure travel. Since then, he’s embarked on three Austin-Lehman tours, including a multisport adventure in Costa Rica and two biking adventures in Europe. His goal? “To find out if a ‘somewhat out of shape, 56-year-old, ex-semi-pro football player/radio newsman/sales guy could enjoy a week of adventure travel.” Read his account below.

I came to Austin-Lehman seven months ago with 30 years of sales experience and a lifelong love of travel. It was the “adventure” department that was new to me. I’m a pretty active guy – I’ve skied the Alps, surfed in Hawaii and golfed in Jamaica. But as I prepared for my ALA adventures, I began to worry, questioning just how “active” I really was.

Local Bites: Bouillabaisse
Trip: France - Taste of Provence

Method:
  1. Heat the olive oil in a large saucepan, and add the onions, leeks, chopped tomatoes, and garlic. Cook and stir over a low heat for a few minutes until all vegetables are soft.
  2. Stir in the fennel, thyme, bay leaf, and orange zest. Add shellfish and boiling water; stir to combine. Season to taste with salt and black pepper. Turn up the heat to high, and boil for about 3 minutes to allow the oil and water to combine.
  3. Add fish, and reduce the heat to medium. Continue cooking for 12 to 15 minutes, or until fish is cooked. The fish should be opaque and tender, but still firm. Fish should not be falling apart.
  4. Bake, uncovered, at 350 degrees F for 20-25 minutes or until fish flakes easily with a fork.
  5. Taste the bouillabaisse and adjust the seasoning. Stir in saffron, andthen pour soup into a warmed tureen or soup dishes. Serve immediately.

Ingredients
- 3/4 cup olive oil
- 2 onions - thinly sliced
- 2 leeks - sliced
- 3 tomatoes - peeled, chopped
- 4 cloves garlic - minced
- 1 sprig fennel leaf
- 1 bay leaf
- 1 tsp orange zest
- 3/4 lbs mussels - cleaned
- 9 cups water - boiling
- 5 lbs sea bass
- 1 pinch saffron threads
- 3/4 lbs fresh shrimp - peeled
 
The toughest part is going home.
