When Vanessa asked me to write something for the newsletter about our recent trip to Havasupai I said, “I would love to.” In the last ten years I have had some very exciting adventures, but Havasupai was beyond my expectations

"It was my turn for the 20 ft jump off off the rocks to the pools below. The sound of water rushed in my ears as I saw Nick point to the footholds. I was on auto pilot as I carefully placed my feet and pushed myself off the rocks. I was airborne only briefly before I felt my body plunge into the water below. I couldn’t believe I’d just done such a crazy thing! Filled with adrenaline, I swam to shore. We gathered as a group and cheered on the rest of the jumpers." Read more »

Local Bites:
Trip: Wyoming/Grand Teton – Valley Floors to Jagged Peaks Adventure
Method:
  1. Melt butter over double boiler and add chocolate and melt.
  2. While chocolate is melting whip eggs, yolks and sugar to ribbon (pale yellow).
  3. Add Chocolate and Butter mixture to the whipped eggs.
  4. Sift Flour and Salt together and add to the mixture. Mix lightly until incorporated.
  5. Spray soufflé dishes with non-stick spray liberally and ladle cake batter into soufflé dishes ¾ of the way to the top.
  6. Allow the cake mixture to thicken set slightly at room temperature. Then pipe 1 1/2 Tablespoons of ganache into each soufflé dish. Ganache recipe to follow. The cakes can be refrigerated for up to a week.
  7. Bake at 350 degrees for 14 minutes in a convection oven, or 375 degrees for 16 minutes in a conventional oven.
  8. Garnish with ice cream or espresso crème anglaise
