Montana: Big Sky country, and where Austin-Lehman Adventures calls home. We live and breathe the land here (and raft, ride, bike and hike it, too) and can't wait to give you the inside track on your next Montana vacation.

Montana has 77 named mountain ranges stretching from north to south. Elk and antelope outnumber people two to one, but that’s just part of the Montana appeal, where nature holds the winning hand. We've got real cowboys (who haven't yet heard they're a dying breed), trout-filled rivers, snowcapped mountains, geysers, hot springs, mud pots and fumaroles. And then, of course, there's Big Sky and Paradise Valley, the gateways to Yellowstone National Park – the most awe-inspiring 2 million acres on Earth.

Here's a bet you're bound to win – ask someone for Montana’s state motto. Even if they've visited recently to climb mountains, raft rivers, bike or hike, or to experience Yellowstone National Park, you can bet them ten to one and still win a bundle.

Some will smile knowingly and take your wager, thinking "Big Sky Country" is the answer. And boy does that moniker fit. Travel the state from its green eastern prairies to its western white-capped peaks (a distance of some 500 miles!) and you'll marvel at the immensity of open space and big blue sky. But no matter the popularity of the nickname, and even its presence on some highway signs, your bet's still safe.

Another friend might come up with "The Last Best Place," which has gained in popularity of late as everyone from recent college grads to the just-retired look to live where they can have an active, outdoor lifestyle while still enjoying the culture and convenience of big towns and small cities. When everywhere else with all these attractions seems to be full or quickly filling up, it's no surprise that Montana's wide-open spaces have brought it the more recent nickname of "the last" of the best places.

So what’s the real answer? You're going to be surprised, for it isn't in English, and unlike so many states' mottoes, it isn't Latin either...

Local Bites: Pan Seared Veal Chop with Citron Sauce and Mushroom Risotto
Trip: Big Sky Family Adventure – Cowboys, Canyons & Campfires
Method:
For the Veal Chop
Heat oil in a heavy bottom skillet, season veal chops with salt and pepper, sear chops until golden brown and finish in 350-degree oven.

For Citron Sauce
Make roux by melting butter and whisking in flour. Cook for two minutes and let cool.

Reduce white wine with shallots by half. Add stock, cream, lemon juice, turmeric and bring to boil. Whisk in roux and let simmer for two minutes.

For Mushroom Risotto
Heat broth and keep hot. Melt butter, sauté shallots and garlic, do not brown. Add mushrooms and sauté 3 minutes. Add rice and stir to coat. Add ½ cup broth, stirring constantly until dry. Add another ½ cup of broth and cook stirring until dry. Repeat until all broth is used, about 25 minutes. Finish with white wine, cream, Parmesan and parsley.
